Spinach Garlic Meatballs

Pair these tasty meatballs with Spaghetti Squash or a side of fluffy rice.  The recipe is written to have enough to share with company or put half in the freezer for another quick meal.  This recipe can also be formed and baked as a meatloaf or change the spices around to create a whole new meatball dimension!

Spinach-Garlic Meatballs

3 lbs ground beef
3/4 cup quick cooking rolled oats
4 eggs
1 10oz. package frozen chopped spinach, thawed and drained
4 cloves fresh garlic
2 tsp Italian seasoning (or use a mix of basil, oregano, thyme)
1 1/2 tsp salt
1/4 tsp black pepper

1.  Combine thoroughly all ingredients except meat and spinach.  Add meat and spinach, combine.

2.  Use a 1" cookie dough scoop to measure meat mixture.  Roll into balls and place on a jelly roll pan.

3.  Bake at 350 degrees F for 25-30 minutes or until no longer pink.

Makes approximately 60 meatballs.
