Our family loves to explore foods from other cultures of the world. Even the Pickles love to try new flavors and learn about the countries from which the recipes come. While not every cultural dish is "Pickle Friendly" I am reminded as I make our favorites that often foods from other cultures are naturally free from allergy-typical foods. Exploring flavors and recipes from other countries not only expands our food repertoire, but it makes eating "free" an adventure!
|Pollo a la Mostaza|
Pollo a la Mostaza (Mustard Chicken):
In a skillet saute 4 cloves garlic and 1 large onion in a couple tablespoons of olive oil until tender. Add 3-4 cups chopped, cooked chicken and allow to slightly brown, adding more olive oil if necessary. Add 2 cups water (or chicken broth), 1/4 cup prepared mustard, salt and pepper and allow to simmer on low for about 20 minutes, adding more liquid if necessary. Serve over cooked rice.
