A spur of the moment trip to the park. Really it was mostly about exploring the primary colored jungle of steps, ropes, climbing walls, and slides. But, ya gotta eat! So why not pack something fast and enjoyable, too?
Hard boiled eggs
(My sister deserves all the credit for teaching me how to hard-boil an egg. Place eggs in a pan and cover with water. Bring to a boil and boil for ten minutes. Immediately remove from heat, carefully drain hot water, and cool completely under cold running water or a bowl of cold water and ice cubes. Peel when cool. She was right: they were perfect.)
(We grabbed our bottle of lemon pepper to sprinkle on our tomatoes.)
Parsely Pecan Pesto
(Whipped up this recipe, with pecans in place of walnuts)
(A bag of thawed chickpeas from my freezer, a tablespoon of tahini, a couple tablespoons of lemon juice, a couple tablespoons olive oil, a bit of salt and pepper, and about 1/2 tsp of garlic powder processed in the food processor until smooth.)
Corn Tortilla Chips
(Non-GMO, Organic is our preference.)
And there you have it. A quick picnic lunch as cheery and colorful as all the Pickles giggling with glee on the colorful playground!
