Autumn Fresh

I came across a delightful Apple-Cabbage Slaw a few weeks ago.  So light, with a sweet tang and crunch from fresh apples and cabbage.  It satisfied an autumnal craving. 
I tweaked the original to incorporate more apples, because well, quite frankly, I had more apples than cabbage to work with! But the vinaigrette that it is dressed with?  Perfect!  Whatever you do, just try this is so good!

Apple Cabbage Salad
1/2 cup apple cider
2 Tbsp. apple cider vinegar
1 Tbsp. olive oil
1 Tbsp. honey mustard
4 cups shredded cabbage (I used 1/2 a 16 oz. pre-mix bag of coleslaw mix)
3 cups finely diced apples
salt and pepper to taste
In a large bowl, whisk together apple cider, vinegar, oil, and honey mustard.  Stir in apples and coat well.  Add cabbage, stir, and season to taste with salt and pepper.  Refrigerate for a few hours to allow flavors to mingle before serving.
