Most would agree: it's just better with bacon. From what I hear, this even holds true with chocolate. So then, adding bacon to meatballs? Win-win situation if you ask the Pickles.
Bacon Herb Meatballs
For one pound of ground beef add:
1/4 cup fresh parsley, chopped finely
2 slices bacon, chopped into 1/2 inch pieces
1 T. rolled oats
salt and pepper
Form mixture into balls and bake at 400 degrees F for about 20 minutes, or until cooked through. Alternatively, form the meatball mixture into balls and freeze on a tray lined with parchment paper until solid, then bag and put in the freezer for future use.
