Just because it's fun to change things up.
Scrub clean several small-ish red or yellow potatoes and bring to a boil. Boil until fork tender and remove promptly. Place potatoes on a baking tray and "smash" to crack the top open with a potato masher, fork, spatula, whateveryouwill. Season potatoes generously with the seasonings of your liking. I chose garlic powder, onion powder, parsley, salt and pepper. Drizzle with olive oil and place in a 400 degree Fahrenheit oven for about 10 minutes, or until the potatoes slightly "dry" and crisp on the upper edges. Remove from oven and serve promptly.
