I know. This is just exceptionally simple. But eating "free" can really be simple. And yummy! And fast! Sometimes I just have to be reminded how eating "free" can be so easy.
Either serve this as a side, or swap the bacon with sausage to make this a more filling main dish, but either way the flavor is great and the meal is fast.
Pickle's Bacon and Cabbage Skillet
In a large skillet, brown 1/2 package of bacon, cut into 1" pieces. When cooked through, carefully remove most of the grease from the skillet, but reserve enough in the skillet to flavor the cabbage. Add to the skillet 1 head cabbage, finely sliced. If needed, carefully add some water to the skillet to help steam and soften the cabbage. (Be exceptionally careful...I only do this when the entire skillet is filled to the brim with cabbage. Hot grease and water are splattery and feisty! Be careful!) Season with salt and cover, stirring occasionally, until cabbage is crisp-tender. Serve immediately.
