I love how the most simple ingredients come together for a delightfully simply delicious result.
In Breaking the Vicious Cycle there is a recipe for Banana Pancakes. Just banana and egg. Inspired by Detoxinista's post, we bumped the original recipe up a notch and added a bit of nut butter. Not a typical pancake, but nevertheless they were a truly wholesome lovely start to our day.
Here's what we did:
Mash 4 ripe bananas completely. Mix in 4 whole large eggs. Mix in 1/4 cup fresh made peanut butter and 1/4 tsp. baking soda. (We started with our fork, then switched to a hand mixer to make our batter nice and smooth.)
Using a cookie dough scoop, we poured the batter onto parchment lined baking sheets. (They very much want to stick--the parchment is key here!)
We baked at 400 degrees for about 12-15 minutes, or until they started to be lovely golden on the edges.
We were going to put them on cooling racks, but they made it to our plates faster. You could serve these with maple syrup if you really wanted to, but the banana brought a lovely sweetness of its own, and the nut butter grounded the flavor.
They disappeared super fast and left us satisfied.
