Monster-ness


This recipe dates back to my childhood.  A neighborhood friend shared the original recipe with my mom and we made lots of Monster Cookies.  The original recipe calls for a dozen eggs, if that gives you any idea of just how MONSTER the recipe is.  And as for the cookies themselves, well the original recipes states, "6 cookies to a sheet [pan]."  Yes, monster-ness squared.
 
While the original recipe is almost completely Pickle friendly, I pared down the ingredients (and the size!) of the recipe to meet our dietary needs exactly.  The resulting cookies brought out the same result in my Pickles as it did in me just a few years back:  "Can I have another one?!"

Monster Cookies

3 eggs
1/2 cup palm shortening
1 cup brown sugar
1 1/2 cup sunbutter (or nut butter of choice)
1 teaspoon vanilla
1 cup sugar
4 1/2 cup quick oats
1 teaspoon vanilla
2 teaspoons baking soda
2/3 cup chocolate chips
1/2 cup chopped nuts
1/2 cup unsweetened shredded coconut

1.  Preheat oven to 350 degrees Farenheit.

2.  Mix ingredients in order given.

3.  Use large cookie scoop (approximately 2 Tablespoons) to drop on cookie sheet.  Flatten dough to disc shapes.

4.  Bake 12 minutes--do not overbake.  Remove promptly to cooling rack.

Makes 2 1/2 to 3 dozen large cookies.


Raisin Spice Variation:

3 eggs
1/2 cup palm shortening
1 cup brown sugar
1 1/2 cup sunbutter
1 teaspoon vanilla
1 cup sugar
4 1/2 cups quick oats
2 teaspoons cinnamon
1/2 teaspoon allspice
2 teaspoons baking soda
1 cup raisins
1/2 cup chopped nuts
1/2 cup unsweetened shredded coconut.
