Pea Week--Supreme Peas


You could serve this as a side dish to a fancy meal or cook a pan of rice and make this the glorious topping.  Either way, be prepared for the pan to be licked clean!

Supreme Peas

4-5 cups peas, fresh or frozen
4 slices bacon, cut into 1" pieces
1/2 red onion, chopped (approximately 1 cup)
2 1/2 cups chopped fresh mushrooms
1/2 teaspoon Worchestershire sauce
salt and pepper to taste

1.   Place peas in saucepan and cover with water.  Bring to a boil, then reduce heat and simmer until peas are hot and tender.

2.  Cook bacon in a large skillet until crisp.  Add onion and mushrooms and cook until tender.  Add Worchestershire sauce, salt and pepper.  Add drained peas and gently stir to combine.
