As much as I love trying new recipes and tweaking and changing recipes and making my kitchen a lab for experimentation, I have my old-faithful stand-by recipes as well.
Fruit Set Salad has stood the test of time and trial. It is great for potlucks, picnics, and regular Pickle-friendly dinners. And it still satisfies my love of recipe-tweaking by easily changing out the juice or fruits while always turning out delicious. Sweetened only by the fruits and juice, this satisfies a sweet tooth with no added sugar!
Here is the recipe:
Fruit Set Salad
2 envelopes unflavored gelatin
1 cup cold water
12 ounce frozen unsweetened apple juice concentrate, thawed
2 banana, sliced in rounds
8 ounces unsweetened crushed pineapple
2 cups chopped fresh fruit (apples, grapes, etc.)
In a medium saucepan, sprinkle gelatin over cold water. Allow to dissolve for 1 minute. Heat to dissovle completely, stirring to keep from burning. Remove from heat and stir in juice concentrate. Pour into two quart dish. Add fruit and chill until set.
