Basil Peach Crisp


Basil Peach Crisp

For filling:
In a large bowl, stir together:

6 cups fresh sliced peaches
2 TBSP fresh, finely chopped basil
1 TBSP granulated sugar
1 tsp. lemon juice
1/2 tsp. lemon zest

Pour into a baking dish and set aside while assembling topping.

For topping:
In a small blender combine and process to a coarse flour:
1/4 cup sliced almonds
3 TBSP rolled oats
3 TBSP rice flour

Pour almond/flour mixture into a bowl and add:
2/3 cup brown sugar
2/3 cup rolled oats
1/4 tsp. sea salt

Stir to combine.

Pour 1/4 cup melted coconut oil over mixture and work oil through with a fork until evenly combined.

Pour topping mixture over peaches and bake at 400 degrees Fahrenheit for 25-30 minutes or until top is browned and mixture is bubbly.
