Banana Muffins (now dairy free)

Banana Muffins
4 cups old fashioned rolled oats
1 cup rice flour
4 eggs
2 ripe bananas
2 cups unsweetened almond milk
1 1/2 cup granulated sugar
3 teaspoons baking powder
2 teaspoons cinnamon
1 teaspoon baking soda
Process rolled oats in a food processor until oats resemble flour.  Add ingredients from rice flour through cinnamon.  Process until smooth.  Add baking soda and process to combine.
Scoop into muffin tins lined with baking papers.
Bake at 375 degrees for 18-20 minutes, or until toothpick inserted in center comes out clean.
(Wanna make some little Pickles really happy? 
Melt a little palm shortening, mix up some cinnamon sugar, dip in one and then the other. 
Smiles will abound.
