Warm Spiced Apples


Everyone gets all a-flutter about Pumpkin-Spice-This and Warm-Cinnamon-That ...in October.
But there's no need to let the excitement for the comfy-cozy flavors of spice to die down come January.  Here's a Pickle favorite:  Warm Spiced Apples.


Actually she's whipped them up for breakfast for herself and the rest of the Pickles these past two chilly mornings.  Perfect for topping pancakes, serving as a satisfyingly sweet side dish for dinner, or playing solo for breakfast, a morning that starts with the warm scent of cinnamon and vanilla waking up the house is indeed a good morning.

Warm Spiced Apples
5 apples, peeled and chopped
1 Tablespoon lemon juice
1 Tablespoon honey
1 teaspoon vanilla extract
1 teaspoon ground cinnamon

In a medium pot, combine tall ingredients.  Simmer over medium heat until apples are tender, stirring especially in the beginning to keep the apples from sticking.
